good morning and welcome to Memphis our
Indonesia here a city with a population
of 1.4 million we are going to discover
what some people call the best food in
Indonesia Indonesia has the largest
Muslim population on the planet and a
large Muslim population means lots of
halal food is there any part of the cow
you cannot eat I don't think not all the
things you saw that all the time in
places where most people are eating
halal food
you'll also find less daring food than
you might in other parts of Asia well
today we've come to the city of Makkah
so what these are lungs yes Indonesia
Street food capital when I have my first
child I'm tipping their head in this
broth you can forget your boring old
fried rice or noodles 1 2 3 because here
we're exploring the most unique Wow I
didn't know that most extreme halal food
you'll find anywhere today I'm gonna get

here this is a a piece of a tree it's
like waterlogged and they've got what
looks like coconut milk and spices in
here so I'm gonna try to just kind it

this is a bitter melon stuffed with
spices and fish sauce everything goes on
rice let's try it out oh my god creamy
and coconut milk there's some fish
inside is so like crumbly like it makes
your mouth dry out a little bit beyond
that we have a peanut sauce here that
you can mix with whatever you want so
I'm gonna put that on here peanut sauce
is like mostly chilies it is very spicy
it's got some great savory saltiness to
it enough with all that why did I order
four of these this is the blubber lip
right here yes the meat looks awesome
it's a very hearty thick kind of robust
chickeny meats
mmm great smoky flavor put a little bit
of this spicy Sun ball on the air Somme
ball is so important in Indonesia
it's like ketchup in the USA any
restaurant you go to they're gonna have
some spicy sambal and do not
underestimate it it's gonna be very
spicy
nice big fishy by tons of sambal tons of
rice this is markets are in a fork mmm
awesome oh so fresh that's a great combo
though even though it's spicy as heck it
kind of lightens up this fish this is
kind of the trick dog you just had some
rice for sambal and everything inhale a
lot to this spicy but not so much that
you faint don't get lightheaded
to help me along today's eating
adventure I've enlisted to help among
Kassar local feed done and Fatah has
enlisted the help of more Makos are
locals putting on a traditional
welcoming ceremony
what's going on they're doing a kind of
dance for these things is presented to

alcohol they take the fermented Sado
starch and mix it with hot water
creating an insane chemical reaction
transforming its physical properties in
with the starch or getting a pardon oh
my gosh it's like jello that is so thick
now it just went from the start stop
start and then the water mix and
instantly it's like this horse glue it's
ready to make it into bulls like that
it's handmade Wow
just like that you want to tie my dope I

here these are all the final ones that
have kind of set they're not going to
change shape anymore oh it feels so

it's so offensive that's there for the

next they boiled green beans and spinach
on the side the mortar and pestle is
loaded with peanuts salt msg banana
heart eggplant celery and corn all
lovingly smashed together and dropped in
the boiling pot
we've got a little bit of shrimp chicken
some vegetables this is some
healthy-looking broth I'll just try it
out oh it's got the taste of boiled
spinach blow salting low peanut flavor
Before we jump into those masago balls a
little bit of shrimp maybe even some
chicken to eat you got to be careful I
almost took out a tooth it actually does
taste a little bit like savory MSG and
then chicken peanut and spinach that's
great so now we're gonna really get into
it it's kind of bizarre looks very
strange so you can eat that no problem
yeah the plain one you freaked out this
is no problem for you definitely okay
let's try it out hey it makes me uneasy
what is going on same frothy flavor it's
like soaked it up a little bit but
mainly it's just a ball of goo it's like
a loogie no I can't help it warm and
thick and viscous so still enjoying it
in the same way it's a hard texture to
get used to if you had to choose between
you know rice noodles or these what are
you gonna choose maybe rice yeah it's
tough like I think this is good for
special occasions
anniversaries Presidents ding but
otherwise I don't know I couldn't do
this every day next on my map is our
hunger hit list choke Oh gah gah
this is an institution in this city open
24 hours a day to fulfill all your
animal offal needs what is the name of

these innards soaked in the restaurants
famous beef broth what makes this dish
really stand out is that here they're
not just serving your usual cuts of beef
but also the delicious innards you

yeah this is long lungs that is very
unique black is tonight or you're taking
some liver I'm taking some just regular
meat it's good it's soft but I know it's
bland it's just a little beefy flavor
but I think it needs that wrong with our
innards in hand it's time for their
legendary broth it's a secret recipe
from this restaurant don't tell me
that's the axe and the water there's
eggs in water I think we can kind of
figure it out though if we look hard
enough like what is that garlic yeah a
ton of animal fat and just little pieces
that have broken off so it looks super
oily heavy beefy frothy like these words
guys these are some pretty good food
words alongside the main course ketchup
on rice and coconut cream weaved inside
a banana leaf kay sir he's gonna take a
piece of it and just like kind of cut it
open so that when people eat these later
on they're just kind of easy to open
otherwise it would be completely stuck
again try it oh thank you mmm of course
they're supposed to be prepared for
something else but it's very creamy it's
almost like mushy and that's gonna pair
it with our other food over here

let me tell you as far as halal goes
this is some extreme halal food right
here does that work to make any sense
give it a little bit of a mix we got
plenty of onion in there and then whoknows mystery meats right here alright
let's try it out what it's kind of
gentle as when you look at the broth it
looks like it kind of intense and bold
and gravelly but the flavor here itself
it's like that's kind of gentle bit
savory and have a awesome texture they
soak up that broth I like it I love it
although they say it'll have one of your
favorites yeah what do you like so much
about this you can find it everywhere
but there are a lot of places and this
one is the best one what are other
restaurants who boil random cow parts
doing wrong and oh no it's the same same
but you said this one is the best maybe
it does mister a secret recipe yeah
that's a plan they've already slid it
open with a razor which I kind of wish
our friends from earlier was here maybe
instead of how long I'll just tell you
right for you and for me that's enough
let it soak up that looks gorgeous go
deeper deeper deep your food Ranger a
lot he goes pretty deep
anything you put this broth on will
become blessed I'm gonna baptize my
child in this broth huh why is this

opened they were like everything is
perfect we're killing it don't change

around since 1968 once a small food
stole they now have locations extending
out to Jakarta their signature massive
beef ribs served two ways dipped in
broth or grill what should we get today
I think that that one the glue can we
put on some peanut sauce too

think I can just like mop up the peanut
sauce
Wow oh man that's a good combo I've
never had that before wonderful peanut
flavor Wow now I got it when I went into
the kitchen I was intimidated by the
state of things but it turns out after
all these years they're doing something
right because this tastes really good
yeah how does it compare to other ones
that you have had maybe as we great what
do you think I mean for me I have
nothing to compare it to yeah I'm not
gonna compare it to American ribs or
something like that I think from being
here on the side of the street hanging
out with all these kids will hold up
like it's a drive-in flippin movie for
me that makes it a 10 absolutely
everything people here are so
enthusiastic for me this was a day full
of new discoveries and really extreme
halal food here at Memphis armed there's
a very unique original halal food that
I've never had before anywhere else in
the world all we're gonna do now oh it
